Cabrito guisado is one of those traditional dishes that belongs in a clay pot, the kind of food cooked for special occasions and handed down from generation to generation. Every family has its own version, but today we are making a simple one that always turns out well.
There are many ways to prepare goat, from the classic breaded goat chops to this slow stew, which we love for its traditional method and the flavors that pair so perfectly with the meat. You can boost the taste by adding other ingredients or swapping the ones listed for whatever you prefer.
You can also choose between a softer white wine or a red wine, which will remind you a little of French coq au vin. The stew takes time, but the preparation is easy: the only tricks are low heat and no rush, and the rest takes care of itself.

Ingredients for Cabrito Guisado
Serves 2
- 3 garlic cloves
- A few fresh parsley leaves
- 4 tablespoons extra virgin olive oil
- 500 g chopped goat meat
- 1 onion
- 2 carrots
- 1/2 red bell pepper
- 200 ml white wine (or red wine for a stronger sauce)
- 4 sprigs fresh rosemary
- 2 bay leaves
- Salt to taste
- Ground black pepper to taste
- 500 ml water

How to Make Cabrito Guisado Step by Step
1. Make the garlic and parsley paste
Peel 3 garlic cloves and wash a few parsley leaves. Chop both ingredients in a mortar and pound with 2 tablespoons of olive oil until you get a paste that is not too fine.

2. Season and marinate the goat
Season 500 g of chopped goat meat with salt and pepper, transfer it to a bowl and coat it well with the garlic and parsley paste. Cover with plastic wrap and let it rest for at least 1 hour in the fridge, or even better, overnight.

3. Chop the vegetables
Peel and chop 1 onion, peel and slice 2 carrots, and cut half of 1 bell pepper, removing the seeds and cutting it into medium pieces.

4. Brown the goat
In a clay pot with 2 tablespoons of extra virgin olive oil, brown the meat for a couple of minutes over high heat.

5. Add the vegetables
Lower the heat to medium and add all the chopped vegetables (onion, carrots and bell pepper) to the pot. Cook for about 10 minutes until golden, stirring from time to time so they don't burn.

6. Add the wine and herbs
Add 200 ml of white wine, 4 sprigs of fresh rosemary, 2 bay leaves and salt and ground pepper to taste. Sauté for 5 minutes so the alcohol evaporates.

7. Add water and simmer
Add 500 ml of water and stew the meat over low heat for about 2 hours.

8. Blend the sauce
Remove the meat and discard the rosemary sprigs and bay leaves. Blend the remaining broth with the vegetables in a blender or food processor, then return the sauce to the pot with the meat. Cook for 5 more minutes.

9. Serve the goat in its sauce
Serve on individual plates with the goat covered in sauce. You can pair it with oven-roasted potatoes, mashed potatoes, sautéed mushrooms, white rice or a salad to taste, plus plenty of bread for dipping.

Tips for the Best Cabrito Guisado
Low heat and patience
The stew takes time, but the preparation is simple. The only tricks are low heat and not rushing; the rest will happen on its own as the meat becomes tender and the sauce concentrates.
Blending the sauce is optional
Blending the sauce is always optional, but it turns out thick and perfect for serving with roasted potatoes, sautéed mushrooms and a good rustic loaf of bread.
Choose your wine and sides
Pick a softer white wine or a red wine for a deeper sauce that recalls French coq au vin. Serve it with roasted potatoes, mashed potatoes, mushrooms, white rice or a salad, and bread to mop up the sauce.
