Mandu are Korean dumplings with a juicy, savory filling wrapped in thin wheat skins. They come together quickly with ground pork, cabbage, and chewy sweet potato noodles, and they cook in just minutes once assembled.

You can pan-fry, steam, deep-fry, or boil them, and the filling is endlessly adaptable. This version keeps things classic and simple, with garlic, ginger, soy sauce, and sesame oil doing the heavy lifting.

How to Make Mandu Step by Step

1. Cook and Drain the Sweet Potato Noodles

Start by preparing the dangmyeon. Boil 50 grams of these sweet potato noodles in boiling water for the time recommended on the package by the manufacturer. Once cooked, drain them very well, cut them into pieces with scissors or a knife, and continue with the recipe.

2. Mix the Filling

In a large bowl, mix the sweet potato noodles with 250 grams of ground pork, 100 grams of finely chopped cabbage, 1 grated garlic clove, 1 teaspoon grated ginger, 1 tablespoon soy sauce, 1 teaspoon sesame oil, and salt and pepper to taste. Mix these ingredients very well until you get a homogeneous mixture.

3. Fill the Wrappers

Place a portion of the freshly prepared meat filling in the center of each of the 20 mandu or gyoza wrappers. Once the filling is placed on each piece of dough, moisten the edge to proceed with sealing it.

4. Seal the Dumplings

Next, close the wrapper by pressing the edges well so it stays properly sealed.

5. Add the Pleats

Optionally, moisten the edge again and make 4-5 pleats along it to give it a more authentic look. Repeat the process until you finish all the filling and wrappers.

6. Pan-Fry the Mandu

Heat a skillet over medium heat and grease it with vegetable oil. Cook the mandu on both sides for a couple of minutes, until the wrapper is golden. For the amounts indicated in this recipe, you will need to cook the mandu in several batches.

7. Steam Them Through

At that point, add 50 ml of water to the skillet and cover it so they finish cooking by steam for about 4-5 minutes. After this time, uncover the skillet and let the water finish evaporating while the mandu finish cooking, as they should be completely cooked inside.

8. Repeat Until All Are Cooked

Repeat until all the mandu are cooked, keeping in mind that after browning each batch, you will need to add 50 ml of water to the skillet to finish cooking them by steam. As you get them ready, set them aside on a plate covered with another inverted plate to keep them warm.

Tips for the Best Mandu

Choose Your Cooking Method

Mandu can be prepared pan-fried, steamed, fried, or boiled, and the fillings can vary according to the tastes and preferences of your guests. The most typical ones include ground meat, finely chopped cabbage or kimchi, dangmyeon noodles, even tofu and mushrooms. You can add a spicy kick if you like, with spicy kimchi or chili flakes.

Serve Them Fresh

To enjoy them at their best, take the mandu freshly made, so the dough does not soften after being pan-fried. Serve them optionally accompanied by finely chopped scallion, chives, or sesame seeds.

Keep Them Warm

Since you will likely cook the dumplings in batches, keep the finished ones warm by covering them with an inverted plate. This preserves their crisp exterior and keeps the filling hot until everything is ready to serve.
